In the untamed beauty of Scotland's rugged north coast lies a hidden gem - the Wolfburn distillery, where tradition meets innovation to craft exceptional single malt Scotch whisky. First established in 1821, Wolfburn quickly became the pride of Caithness, renowned for its dedication to craftsmanship and whisky excellence. Today, Wolfburn’s journey continues as it honours its heritage by handcrafting each batch with meticulous care and the finest ingredients.


A Revival of Heritage


In 2011, Wolfburn Distillery rose from the ashes to reclaim its title as the northernmost distillery in mainland Scotland. Situated just a stone's throw away from its historic predecessor, the distillery's revival breathed new life into an age-old tradition. Despite the passage of time, the pristine waters of the Wolf Burn still flow, infusing its whisky with a purity that reflects the spirit of the land.

Guided by the expertise of distillery manager Shane Fraser, who has honed his craft via stints at Oban, Royal Lochnagar and Glenfarclas Distilleries, and his unwavering dedication to his craft, cherished time-honoured techniques are employed to create spirits of unparalleled quality. From Wolfburn’s signature copper pot stills to its carefully selected casks, every aspect of production is a testament to a commitment to excellence, which is only further enhanced by the Distillery drawing inspiration from the breath-taking beauty of its dramatic surroundings, rich history and heritage of the Scottish Highlands.


Crafting Magic, One Batch at a Time


From the long fermentation process to the gentle distillation, each batch of whisky is crafted with precision and care. With no automation in sight, Wolfburn’s artisans oversee every step of the process, ensuring that each bottle of Wolfburn whisky is a masterpiece worthy of our heritage.


Wolfburn Northland


For quite some time, I've eagerly anticipated the opportunity to sample Wolfburn's Northland, a whisky crafted with an intriguing twist. From the aforementioned prolonged fermentation to its slow, manual distillation, and maturation in quarter casks once home to peated whisky from Islay, every step of the process promises a whisky experience unlike any other.


Upon first approach, the nostrils are tickled by a delightful medley of orchard fruits, reminiscent of freshly baked apple pie. A wave of fresh maltiness intertwines with subtle hints of almonds and magnolia, while a whisper of smoke lingers in the background, adding depth and intrigue.


On the top of the mouth, flavours unfold like a symphony on the taste buds. The initial sip reveals notes of Honey Nut Clusters breakfast cereal, accompanied by a delicate interplay of sweet spices and the indulgent richness of a chocolate croissant, seamlessly transitioning into an emerging crescendo of honey sweetness, leading to a subtle earthy peatiness that adds a captivating layer of complexity.


The finish is long and invigorating, with the lingering echoes of rich honey notes dancing on the palate. Each sip leaves a lasting impression, inviting one to savour the moment and relish in the whisky's depth and character.


With its deliciously complex profile and masterful blending of flavours, Wolfburn has truly hit it out of the park with this release.


Wolfburn Morven: A Symphony of Peat and Fruit


Wolfburn Morven, a recent addition to the distillery's esteemed core range, emerges as a delightful expression of lightly peated single malt whisky.


Joining the ranks alongside the above elaborated on Wolfburn's renowned Northland Single Malt and the opulent Sherried Aurora Single Malt, Morven proves that this relatively new distillery has fortified its place among whisky enthusiasts.


As the amber liquid swirls in the glass, the nose is greeted with a burst of freshness reminiscent of ripe juicy apples and luscious white grapes. Yet, beneath this fruity facade lies a subtle hint of earthy peat, adding depth and complexity to the aroma.


The journey continues on the palate, where nutty malt takes centre stage, perfectly complemented by a whisper of soft smoke. With each sip, the palate is treated to the tantalizing dance of peppered oak and caramelized fruit, gradually unfolding to reveal layers of flavour and texture.


The grand finale arrives with a sweet crescendo as hints of delicate shortbread and warming ginger linger on the palate, leaving one lusting for another dram.


In essence, Wolfburn Morven is a harmonious blend of peat and fruit, crafted with precision and finesse. With its balanced profile and lingering finish, this expression is sure to captivate both seasoned whisky connoisseurs and adventurous newcomers alike.
